DT4 Ruins of the Wild is a great all-purpose outdoors set. Dire Tombs is nice for indoor tombs, though this set has a very sand/Egyptian flavor to it, which may or may not work for you. Also has some nice angled corridors and corners, which makes it kinda fun to mess with. Streets of Shadows is nice for outdoors stuff + indoor sewers action. I've generally had good luck with all the tile sets, but the three above are my favorites. Some are out of print, so good luck finding them.

I really like the large rooms and interesting features of Dire Tombs, although as some have mentioned it doesn't fit thematically with the other dungeon sets. The latest set, Arcane Towers, has great round room tiles, but you really need two sets to get the best use from them. Word from Gen Con is that there will be a Dungeon Tiles Master Set out in the near(ish) future, that will probably have everything you need.
